Ingredients
  

Main Ingredients
  • 3/4 cup extra virgin olive oil Use the best quality available.
  • 2 tablespoons balsamic vinegar Choose quality balsamic, not syrupy.
  • 2 tablespoons parsley leaves, finely chopped
  • 2 tablespoons basil leaves, finely chopped
  • 2 tablespoons Castelvetrano olives, chopped
  • 2 tablespoons Kalamata olives, chopped
  • 1 clove garlic, grated Freshly grated for best flavor.
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon flaky sea salt Adjust to taste.
  • 1/4 cup Parmesan cheese, freshly grated Always use freshly grated.
  • Fresh warm bread For serving.

Method
 

Preparation
  1. In a shallow bowl, add the olive oil and drizzle the balsamic vinegar on top.
  2. Finely chop the fresh herbs and olives and add to the bowl.
  3. Grate in the garlic clove and add the oregano and sea salt.
  4. Freshly grate the parmesan cheese and stir well so all the ingredients are combined.
  5. Serve alongside fresh crusty warm bread.

Notes

Let the oil sit for 10 minutes before serving for better flavor blending, or serve immediately for instant gratification. Store leftover oil in the fridge for up to 3 days.
