Ingredients
  

For the cookies
  • 1/2 cup unsalted butter, softened Buy good butter.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup peeled, cored, and finely chopped apples (about 1 medium apple)
  • 1/2 cup chopped nuts optional
  • 1/2 cup raisins optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
  2. Cream the softened butter, granulated sugar, and brown sugar in a large bowl until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Whisk together the flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt in a separate bowl.
  5. Gradually add the dry and wet ingredients, mixing until just combined.
  6. Fold in the chopped apples, and if using, the chopped nuts and raisins.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the cookies are set.
  2. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  3. Serve warm or at room temperature. Enjoy!

Notes

Chill the dough if your kitchen is warm to prevent spreading. You can freeze the dough for later use.
