  • 12 oz spaghetti
  • 1 lb ground beef (lean-ish) Can substitute with turkey for a leaner option.
  • 3 tbsp soy sauce Trader Joe’s soy sauce recommended.
  • 1 tbsp fresh ginger, minced Essential for flavor.
  • 3 cloves garlic, minced
  • 3 stalks green onions, chopped Reserve tops for garnish.
  • 2 tbsp vegetable oil
  • 1 large carrot, julienned or thinly sliced
  • 1 medium bell pepper, thinly sliced Any color.
  • Salt, to taste
  • Freshly ground black pepper, to taste

Method
 

Preparation
  1. Cook the spaghetti according to package instructions. Drain and set aside.
Cooking
  1. In a large skillet, heat vegetable oil over medium heat.
  2. Add chopped garlic and ginger, and sauté until fragrant.
  3. Add ground beef, cooking until browned.
  4. Stir in soy sauce, salt, and pepper.
  5. Add sliced carrots and bell peppers, cooking until tender.
  6. Toss in the cooked spaghetti and mix well.
  7. Garnish with chopped green onions before serving.

Notes

When tossing the noodles, pretend you’re in a tiny cooking show. If the sauce seems dry, add a teaspoon of water to help it come together.
