Banana Bread Cinnamon Rolls

Ingredients
  

For the dough
  • 3 ripe bananas (mashed) Use really ripe bananas for the best flavor.
  • 2 cups all-purpose flour You can substitute whole wheat flour but texture will change.
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1 tbsp ground cinnamon Add a pinch of nutmeg for extra flavor.
  • 1/4 cup unsalted butter (melted) Use real butter for the best taste.
  • 3/4 cup whole milk (or almond milk)
  • 2 large eggs Can be substituted with flax eggs.
  • 1 tsp vanilla extract
For the cinnamon-sugar mixture
  • 1 tbsp granulated sugar For sprinkling over the buttered dough.
  • 1 tbsp ground cinnamon Use more if you love cinnamon.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, mash the bananas. Mix in melted butter, sugar, eggs, milk, and vanilla until combined.
  3. In another bowl, whisk flour, baking powder, and cinnamon. Gradually add to wet ingredients until just combined; do not overmix.
Rolling and Baking
  1. Roll dough on a floured surface into a rectangle (about 1/4 inch thick).
  2. Spread softened butter over the dough and sprinkle with the cinnamon-sugar mixture.
  3. Roll the dough tightly into a log and cut into equal pieces.
  4. Place rolls in the greased dish, allowing them to rise slightly.
  5. Bake for 25-30 minutes or until golden brown on top.

Notes

These rolls can be made ahead of time. Cover and refrigerate, adding an extra 5-8 minutes to the baking time if baking from chilled.
