Assembly
- Slice the cooked chicken and assemble the bowls starting with a base of roasted sweet potatoes.
- Layer the sliced chicken, diced avocado, and corn on top.
- Garnish with fresh herbs if desired and serve immediately.
Notes
This recipe can be meal-prepped by storing components separately to prevent sogginess. You can also sauté the vegetables instead of roasting them if you prefer.
