  • 1 cup barbecue sauce Choose a high-quality barbecue sauce.
  • 2 large sweet potatoes Peel and dice before roasting.
  • 1 cup corn Can be fresh or canned.
  • 1 piece avocado, diced Chunky avocado adds a nice texture.
  • to taste Olive oil For tossing sweet potatoes.

  • Fresh herbs Optional for garnish.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice sweet potatoes into small cubes and toss them in olive oil, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast in the oven for 25-30 minutes until tender.
Cooking Chicken
  1. In a skillet, cook the chicken breasts over medium heat for about 6-7 minutes on each side until fully cooked.
  2. Brush the cooked chicken with barbecue sauce and heat through.
Assembly
  1. Slice the cooked chicken and assemble the bowls starting with a base of roasted sweet potatoes.
  2. Layer the sliced chicken, diced avocado, and corn on top.
  3. Garnish with fresh herbs if desired and serve immediately.

Notes

This recipe can be meal-prepped by storing components separately to prevent sogginess. You can also sauté the vegetables instead of roasting them if you prefer.
