- Get your skillet hot over medium heat.
- Add olive oil and the diced sweet potatoes and cook until they start to brown.
- Add the sliced red onion and cook until softened.
- Stir in the corn and cook for a couple of minutes.
- Add the shredded chicken and BBQ sauce, stirring well to combine.
- Cook until heated through, allowing the BBQ sauce to thicken slightly.
- Top with shredded cheddar cheese and cover until melted.
- Garnish with sliced green onions before serving.
Notes
If using frozen sweet potato cubes, thaw slightly to avoid steaming. Shredding chicken thinly helps it meld better with the rest of the ingredients.
