  • 1 lb beef (sliced thinly) Use affordable cuts like flank or skirt steak.
  • 2 pieces bell peppers (sliced) Any color of bell peppers is fine.
  • 1 piece onion (sliced)
  • 2 cups cooked rice Leftover rice works great.
  • 1/4 cup soy sauce Regular soy sauce or tamari for gluten-free.
  • 2 tablespoons olive oil
  • 1 tablespoon garlic (minced)
  • to taste Salt and pepper
  • optional green onions for garnish Adds freshness.

Method
 

Cooking
  1. Heat olive oil in a large pan over medium heat.
  2. Add sliced beef and cook until browned.
  3. Add minced garlic and sliced onion, and sauté until the onion is translucent.
  4. Add sliced bell peppers and cook until tender.
  5. Pour in soy sauce and season with salt and pepper, stirring to combine.
  6. Serve beef and pepper mixture over cooked rice.
  7. Garnish with chopped green onions if desired.

Notes

This recipe is quick and can be made with leftover rice. Feel free to customize the vegetables based on what you have.
