Main Ingredients
  • 2 ripe bananas Overripe bananas are preferred.
  • 1 cup oatmeal Can use old-fashioned or quick oats.
  • 1/2 cup protein powder Choose a flavor you like.
  • 1/4 cup honey or maple syrup Use based on preference.
  • 1/2 cup Greek yogurt Plain Greek yogurt for moisture.
  • 2 eggs Large eggs.
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, mash the ripe bananas until smooth.
  3. Add oatmeal, protein powder, honey (or maple syrup), Greek yogurt, eggs, baking powder, vanilla extract, cinnamon, and salt to the mashed bananas.
  4. Mix all ingredients until well combined.
Baking
  1. Pour the mixture into the muffin tin, filling each cup about 2/3 full.
  2. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  3. Allow to cool slightly before removing from the muffin tin and enjoy!

Notes

If your batter seems dry, add a splash more yogurt. If it’s soupy, add a spoonful of oats. Freeze muffins for up to 3 months.
