Preparation
- Cook the lean protein thoroughly in a skillet over medium heat with salt and pepper. Let it cool.
- Soak a rice paper wrapper in warm water for about 10-15 seconds until soft.
- Layer the lettuce, tomato, cheese, pickles, onion, and cooked protein on the bottom third of the wrapper.
- Drizzle with Thousand Island dressing.
- Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom.
- Repeat with the remaining ingredients.
Notes
These rolls can be served with additional dressing for dipping. They are best eaten fresh, but components can be stored separately to avoid sogginess.
