Method
Prepare the Pudding Base
- In a medium saucepan, combine whole milk, heavy cream, and granulated sugar over medium heat until hot.
Temper the Eggs
- In a separate bowl, whisk the egg yolks and slowly add half of the hot milk mixture, whisking constantly.
Cook the Pudding
- Return the egg mixture to the saucepan with the remaining milk, add cornstarch and salt, and cook until thickened. Stir in vanilla.
Cool the Pudding
- Let the pudding cool slightly before layering.
Assemble
- In a dish, layer Biscoff cookies, sliced bananas, and pudding. Repeat until all ingredients are used up, finishing with a layer of pudding on top.
Chill and Serve
- Refrigerate for at least 3 hours. Serve topped with whipped cream if desired and enjoy chilled.
Notes
This dessert can be made the day before serving. Be careful not to let the bananas sit too long to avoid them getting mushy.
