Ingredients
  

For the Mousse
  • 2 cups fresh blackberries Plus extra for garnish
  • 1/4 cup granulated sugar Adjust based on berry sweetness
  • 2 tablespoons lemon juice
  • 2 teaspoons gelatin powder
  • 3 tablespoons cold water
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method
 

Preparation
  1. Wash the blackberries under cold water and gently drain.
  2. Transfer blackberries to a bowl and add sugar and lemon juice. Mash gently to create a chunky mixture.
  3. Bloom gelatin by combining cold water with gelatin powder in a small saucepan and let it sit.
  4. Heat the gelatin mixture gently until dissolved, then let it cool slightly.
  5. Blend the gelatin with the mashed blackberry mixture until well combined.
Whipping
  1. In a separate bowl, whip the heavy cream until soft peaks form.
  2. Add vanilla extract and a pinch of salt to the whipped cream.
  3. Fold a small portion of whipped cream into the blackberry mixture to lighten it, then fold in the rest.
Chilling
  1. Spoon the mousse into serving dishes, cover, and refrigerate for at least 2 hours.

Notes

Feel free to use other berries or add chocolate for extra flavor. Make ahead to save time!
