Preparation
- Preheat the oven to 350°F (175°C). Line a muffin tin with liners.
- In a blender, combine cottage cheese, oats, chocolate chips, eggs, honey, and vanilla. Blend until smooth.
- Add cocoa powder, baking powder, and salt to the blender. Blend again until combined.
- Pour the batter into the muffin tins, filling each about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow to cool before transferring muffins to a wire rack.
Notes
These muffins are a healthy snack that can be enjoyed warm or at room temperature. Stores well in an airtight container.
