  • 1 cup cottage cheese Trader Joe’s eggs are recommended
  • 1 cup rolled oats
  • 1/2 cup chocolate chips Use fancy chocolate chips for better flavor
  • 2 large eggs
  • 1/3 cup honey or maple syrup Adjust to taste
  • 1 teaspoon vanilla extract Double if desired
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line a muffin tin with liners.
  2. In a blender, combine cottage cheese, oats, chocolate chips, eggs, honey, and vanilla. Blend until smooth.
  3. Add cocoa powder, baking powder, and salt to the blender. Blend again until combined.
  4. Pour the batter into the muffin tins, filling each about 3/4 full.
  5. Bake for 18-20 minutes, or until a toothpick comes out clean.
  6. Allow to cool before transferring muffins to a wire rack.

Notes

These muffins are a healthy snack that can be enjoyed warm or at room temperature. Stores well in an airtight container.
