Ingredients
  

Pastry Ingredients
  • 1 package puff pastry Trader Joe’s puff pastry is recommended.
  • 1 large egg For egg wash.
  • 1 cup blueberries Fresh or frozen.
  • 2 tablespoons powdered sugar For dusting, optional.
Filling Ingredients
  • 8 oz cream cheese Softened.
  • 1/4 cup sugar
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface and cut it into squares.
  3. In a bowl, mix the softened cream cheese, sugar, lemon zest, and vanilla extract until smooth.
  4. Place a spoonful of the cream cheese mixture in the center of each pastry square and top with a few blueberries.
  5. Fold the corners of the pastry over the filling, pinching to seal.
  6. Brush the top of the pastries with beaten egg.
Baking
  1. Bake in the preheated oven for 15-20 minutes or until golden brown.
  2. Allow to cool slightly, then dust with powdered sugar before serving.

Notes

These danishes can be made using frozen blueberries. Store leftovers in the fridge for up to 3 days, reheating for 5 minutes in a 350°F oven.
