- Preheat your oven to 350°F (175°C).
- Blend your wet ingredients: cottage cheese, eggs, maple syrup, vanilla, and cinnamon until smooth.
- In a big bowl, mix the dry ingredients: oats and blueberries gently.
- Combine: pour the wet mixture into the dry ingredients and fold gently.
- Grease or line a baking pan with coconut oil spray.
- Pour the batter into the pan and smooth the surface.
- Bake for 30–35 minutes until golden and set in the center.
- Cool before slicing — it firms up as it rests.
Serving
- Enjoy it warm with Greek yogurt and honey, or cold right from the fridge.
Notes
This bake can be made ahead and stored in the fridge for 4 days. It reheats beautifully or can be eaten cold. Feel free to experiment with different berries or add-ins like chia seeds or chocolate chips.
