Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Blend your wet ingredients: cottage cheese, eggs, maple syrup, vanilla, and cinnamon until smooth.
  3. In a big bowl, mix the dry ingredients: oats and blueberries gently.
  4. Combine: pour the wet mixture into the dry ingredients and fold gently.
  5. Grease or line a baking pan with coconut oil spray.
  6. Pour the batter into the pan and smooth the surface.
  7. Bake for 30–35 minutes until golden and set in the center.
  8. Cool before slicing — it firms up as it rests.
