Preparation
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry on a floured surface and cut into squares.
- In a mixing bowl, combine cream cheese, powdered sugar, and vanilla extract until smooth.
- Place a spoonful of the cream cheese mixture and a few blueberries in the center of each square.
- Fold the corners of the pastry square over the filling and pinch to seal.
- Brush the tops with beaten egg.
- Place on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until golden brown.
- Allow to cool slightly, then dust with powdered sugar before serving.

Let the pastries sit for two minutes before dusting with powdered sugar to avoid a mess.
