Preparation
  1. Prepare a baking sheet by lining it with parchment paper.
  2. Make the caramel-filled sandwiches by placing a spoonful of caramel between two Ritz crackers.
  3. Melt the white chocolate chips and vegetable oil together in the microwave in 30-second intervals until smooth.
  4. Dip each caramel-filled sandwich into the melted white chocolate to coat.
  5. Decorate with festive sprinkles before the chocolate sets.
  6. Let the cookies set on the baking sheet. For quicker setting, place them in the fridge.

Notes

These cookies can be made up to 3 days in advance and stored in an airtight container. If your caramel is too runny, chill it or let it simmer to thicken.
