  • 4 pieces boneless chicken thighs Thighs are recommended for their juiciness.
  • 2 tablespoons soy sauce Regular soy sauce.
  • 1 tablespoon dark soy sauce Optional, for a richer flavor.
  • 1 tablespoon brown sugar
  • 1 tablespoon honey Can substitute with maple syrup.
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil For finishing the dish.
  • 2 tablespoons vegetable oil For searing the chicken.
For the Broth and Serving
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 cups chicken broth Higher quality broth is recommended.
  • 2 cups cooked white rice To serve.
  • Chopped green onions For garnish.
  • Sesame seeds For garnish.

Method
 

Preparation
  1. Rub the chicken thighs with a mixture of soy sauce, dark soy sauce, brown sugar, and honey.
  2. Mince the garlic and grate the ginger.
Cooking
  1. Heat vegetable oil in a pan until shimmering, then sear chicken thighs skin-side down until caramelised.
  2. Deglaze the pan with rice vinegar, then add the minced garlic and grated ginger.
  3. Pour in the chicken broth, bring to a simmer, and cook until chicken is fully cooked through.
  4. Finish with sesame oil and garnish with chopped green onions and sesame seeds.
  5. Serve over cooked rice.

Don't rush the caramelisation process; it is key to flavor. Taste as you go to ensure proper seasoning.
