Ingredients
  

For the Lamb Chops
  • 8 chops lamb chops (bone-in, about 1 inch thick) Can use bone-out lamb chops, just adjust cooking time.
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped Fresh herbs enhance flavor.
  • 2 tbsp fresh thyme, chopped Fresh herbs enhance flavor.
  • 3 tbsp olive oil For searing the lamb.
  • 2 tbsp butter For garlic-herb butter finishing.
For the Mashed Potatoes
  • 1.5 lbs russet or Yukon Gold potatoes, peeled and quartered Aldi has good prices for potatoes.
  • 0.5 cup milk Use cream for a richer taste.
  • 1 cup sharp cheddar, shredded Do not skimp on the cheddar.
For the Asparagus
  • 1 bunch asparagus, trimmed Could swap with green beans or broccolini.
  • to taste Salt and black pepper Season to taste.

Method
 

Preparation
  1. Prepare garlic-herb butter by mixing melted butter with minced garlic, rosemary, and thyme.
  2. Peel and quarter the potatoes, and trim the asparagus.
Cooking the Lamb Chops
  1. Preheat a pan until smoking hot.
  2. Season lamb chops with salt and sear in olive oil for about 4-5 minutes on each side for medium-rare.
  3. Spoon the garlic-herb butter over the chops in the last minute of cooking.
  4. Remove the chops and rest for 5 minutes.
Cooking the Mashed Potatoes
  1. Boil the quartered potatoes in salted water until tender, about 15-20 minutes.
  2. Drain and mash with milk and cheddar until creamy.
Cooking the Asparagus
  1. Toss asparagus in the same pan for about 2-3 minutes until charred.

Notes

Serve immediately for the best texture. Meal prep the mashed potatoes by reheating gently with a splash of milk.
