Ingredients
  

Filling
  • 1.5 cups cooked crab meat (or imitation crab) Fresh crab is recommended for best flavor.
  • 1.5 cups shredded mozzarella or Monterey Jack cheese
  • 4 oz cream cheese, softened
  • 1 tbsp sour cream
Taquito Wrap
  • 10-12 pieces small flour or corn tortillas Flour tortillas are more forgiving for frying.
  • Cooking oil for frying Use enough to cover the bottom of the frying pan.
Optional Toppings

Method
 

Preparation
  1. In a bowl, mix together the crab meat, mozzarella or Monterey Jack cheese, cream cheese, and sour cream until well combined.
  2. Take a tortilla and place a generous amount of the crab mixture in the center, then roll it up tightly.
  3. Repeat with the remaining tortillas and filling.
Cooking
  1. Heat oil in a frying pan over medium heat.
  2. Fry the taquitos in batches until golden brown and crispy, about 3-4 minutes on each side.
  3. Remove and drain on paper towels.
Serving
  1. Serve warm with your choice of toppings.

Notes

Press the filling down a little inside the tortilla before you roll to prevent air pockets. Don’t overcrowd the skillet to maintain crispiness. If making ahead, fry until just golden, cool, and then re-fry for a minute before serving.
