  • 4 large potatoes, peeled and sliced Use a starchy variety like Russets for better texture.
  • 1 large onion, thinly sliced Sweet onions work well for a milder flavor.
  • 2 cups shredded cheese (cheddar or your choice) Mix of sharp cheddar, Gruyère, or Monterey Jack recommended.
  • 1/2 cup milk
  • 3 large eggs
  • 1 tablespoon olive oil For sautéing the onions.
  • 1 pie crust (store-bought or homemade) A gluten-free crust can be used if preferred.
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the onions until translucent.
  3. In a mixing bowl, whisk together the eggs and milk. Add salt and pepper.
  4. Layer half of the sliced potatoes in the pie crust, followed by half of the sautéed onions and half of the cheese. Repeat the layers.
  5. Pour the egg mixture over the layers, ensuring everything is well combined.
  6. Top with remaining cheese.
Baking
  1. Bake for 45-50 minutes or until the potatoes are tender and the top is golden brown.
  2. Let it cool slightly before serving.

Notes

If using starchy potatoes like Russets, consider parboiling them for 5 minutes to speed up baking. Pairs well with tea, coffee, or milk.
