Cheesy Shrimp Scampi Pasta Bake

Ingredients
  

Pasta and Shrimp
  • 1 pound shrimp, peeled and deveined
  • 8 ounces pasta (such as penne or rotini)
Sauce
  • 4 tablespoons butter
  • 4 cloves garlic, minced Use fresh, not pre-peeled.
  • 1 lemon juiced
  • 1 cup heavy cream
Cheese
  • 1 cup grated Parmesan cheese Buy decent Parmesan.
  • 1 cup shredded mozzarella cheese
Seasoning and Garnish
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cook the pasta according to package instructions until al dente; drain and set aside.
Cooking
  1. In a large skillet, melt the butter over medium heat and add minced garlic, cooking until fragrant.
  2. Add shrimp to the skillet and cook until pink and cooked through, about 3-4 minutes.
  3. Stir in lemon juice and heavy cream, and bring to a simmer.
  4. Add cooked pasta and half of the Parmesan cheese to the skillet, mixing until combined. Season with salt and pepper.
Baking
  1. Transfer the mixture to a baking dish, top with remaining Parmesan and mozzarella cheese.
  2. Bake in the preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
  3. Garnish with fresh parsley before serving.

Notes

Serve with a green salad and a glass of sparkling personality. Leftovers are a must!
