Cheesy Zucchini Breadsticks

Ingredients
  

For the breadsticks
  • 2 medium medium zucchinis about 2 cups shredded
  • 2 large large eggs
  • ½ cup shredded mozzarella cheese for the mixture
  • ¼ cup grated Parmesan cheese buy good quality
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded mozzarella cheese for topping
Optional Garnish
  • fresh parsley or basil for garnish

Method
 

Preparation
  1. Preheat oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper.
  3. Shred the zucchini using a box grater or food processor.
  4. Place the shredded zucchini in a clean kitchen towel or cheesecloth, and squeeze out as much liquid as possible.
Mixing
  1. In a large mixing bowl, combine shredded zucchini, eggs, ½ cup mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  2. Mix until well combined.
Baking
  1. Spread the mixture onto the prepared baking sheet, pressing it into a thin, even rectangle.
  2. Bake for 20–25 minutes, or until golden brown and firm to the touch.
  3. Remove from the oven, sprinkle 1 cup mozzarella evenly on top.
  4. Return to the oven for 5–7 minutes, or until the cheese is melted and bubbly.
Serving
  1. Let it cool slightly before slicing into breadsticks.
  2. Garnish with fresh herbs if desired, and serve with marinara or ranch dipping sauce.

Notes

These cheesy breadsticks can be made ahead and stored in the fridge. Reheat in the oven for best results.
