  • 1 tablespoon grated ginger Extra flavor boost.
  • 1 teaspoon chili flakes Optional, for a slight kick.

Method
 

Preparation
  1. Wash your cherry tomatoes thoroughly and slice them in half.
  2. Chop your onions and grate the ginger, and set everything near the stove.
Cooking
  1. Heat a drizzle of olive oil in a pan. Add your onions and cook them slowly until golden and soft.
  2. Add the tomatoes, sugar, vinegar, ginger, chili flakes, and salt to the pan.
  3. Let it simmer gently for about 25 to 30 minutes, stirring occasionally, until it thickens and looks glossy.
Finishing Touch
  1. Remove from heat and let it cool completely before transferring to jars.
  2. Store the jam in the fridge for up to two weeks.

Notes

Avoid using underripe tomatoes for the best flavor. You can double the recipe and freeze half in small jars.
