  • 1 can biscuit dough Any brand will do
  • 2 cups cooked chicken, shredded Roasted or rotisserie chicken works well
  • 1 can cream of chicken soup Substitutions like cream of mushroom or celery are fine
  • 1 cup chicken broth Low sodium recommended
  • 1 cup mixed vegetables Frozen or fresh, peas and carrots work well
  • 1 cup shredded cheese Cheddar or your choice
  • to taste Salt and pepper Adjust according to preference

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the cooked chicken, cream of chicken soup, chicken broth, mixed vegetables, and season with salt and pepper.
  3. Cut the biscuit dough into quarters and fold them into the chicken mixture.
  4. Pour the mixture into a greased baking dish and top with shredded cheese.
Baking
  1. Bake for 25-30 minutes, or until the biscuits are golden brown and cooked through.
  2. Serve warm and enjoy your comforting casserole!

Notes

Let the casserole rest 5–10 minutes after it comes out so the gravy settles. If serving for brunch, consider adding mini banana muffins on the side.
