Chicken Souvlaki Marinade

Ingredients
  

For the Marinade
  • 1/4 cup olive oil Use high-quality extra-virgin olive oil if possible.
  • 1/4 cup lemon juice Freshly squeezed for best flavor.
  • 4 cloves garlic, minced Trader Joe’s garlic paste can be used as a shortcut.
  • 2 tsp dried oregano Fresh oregano is even better if available.
  • 1 tsp salt Adjust to taste.
  • 1/2 tsp black pepper
For the Chicken
  • 2 lbs chicken breast, cut into cubes Thighs can also be used for juicier results.
  • 6 pieces wooden skewers, soaked in water This prevents them from burning during grilling.

Method
 

Preparation
  1. In a bowl, mix the olive oil, lemon juice, garlic, oregano, salt, and pepper to create the marinade.
  2. Add the chicken cubes to the marinade, coating them well. Marinate for at least 1 hour, preferably overnight in the refrigerator.
Cooking
  1. Preheat the grill to medium heat.
  2. Thread the marinated chicken onto the soaked skewers.
  3. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serving
  1. Serve with pita, tzatziki sauce, and fresh vegetables.

Notes

This marinade is flavorful and can also be adapted with different herbs. Avoid skimping on the acid (lemon) and garlic for the best taste.
