- Add the diced chicken to the skillet and cook until browned and fully cooked through, stirring occasionally.
Preparing Sauce
- In a small bowl, whisk together tahini, lemon juice, and water until smooth.
Assembly
- In a bowl, layer the cooked brown rice, roasted sweet potatoes, and cooked chicken.
- Drizzle the tahini sauce over the top.
Notes
This dish can be made ahead and stored in an airtight container in the fridge. Reheat before serving. Feel free to add more veggies like broccoli or bell peppers.
