- In a large bowl, combine the cottage cheese, chickpeas, cucumber, parsley, and red onion.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper to taste.
- Mix well until all ingredients are combined.
- Serve immediately or chill in the refrigerator for 15 minutes before serving.
Notes
Don't salt before tasting as cottage cheese can be briny. If chickpeas are too soft, toss them in a pan for two minutes to perk them up.
