Preparation
- Preheat the oven to 175°C (350°F). Grease and flour your pans.
- In a bowl, whisk together flour, sugar, cocoa, baking soda, baking powder, and salt.
- In another bowl, blend eggs, milk, oil, and vanilla extract.
- Combine both mixtures gently until smooth. Stir in boiling water; the batter will be thin.
Baking
- Pour the batter into your prepared pans and bake for 30-35 minutes.
- Test with a toothpick; it should come out clean. Let the cakes cool completely.
Frosting
- Beat softened butter until pale and fluffy. Gradually add powdered sugar and cocoa, then mix in cream and vanilla until smooth.
Assembly & Decoration
- Spread frosting on the first layer of the cooled cake, then add the second layer and cover evenly.
- Chill the cake for 20 minutes to set the frosting.
- Drizzle chocolate ganache on top and decorate as desired.
Notes
Always sift your cocoa and powdered sugar for a silky frosting. Store leftovers covered at room temperature for up to 3 days.
