Preparation
- Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking pan.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a separate bowl, mix melted butter, brown sugar, and 1 teaspoon vanilla extract until combined.
- Add 1 egg and mix well.
- Gradually add the dry ingredients to the wet ingredients and stir until just combined.
- Spread half of this batter into the prepared pan.
- In another bowl, beat the cream cheese, granulated sugar, 1 egg, and 1/2 teaspoon vanilla until smooth.
- Pour the cream cheese mixture over the cookie batter in the pan, then dollop the remaining cookie batter on top.
- Sprinkle chocolate chips over the top.
Baking
- Bake for 30-35 minutes or until set.
- Allow to cool before cutting into bars and serving.
Notes
These cheesecake bars can be made ahead of time and refrigerated for up to 3 days. They can also be frozen for up to 2 months.
