Ingredients
  

For the cookies
  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, room temp Do not skimp on quality.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 2 tsp pure vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp fine sea salt
  • 1 1/2 cups chocolate chips (semisweet or a mix of dark & milk) Go rogue with the types you prefer.
  • 1/2 cup powdered sugar for rolling Optional, for a snow-dusted look.

Method
 

Preparation
  1. Cream the butter and cream cheese until well combined.
  2. Add the granulated sugar and brown sugar; beat until fluffy.
  3. Incorporate the egg and vanilla extract into the mixture.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and sea salt.
  5. Gently fold the dry ingredients into the wet mixture to avoid overmixing.
  6. Chill the dough for at least 30 minutes.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Scoop rounded tablespoons of cookie dough and flatten slightly.
  3. Place a small dollop of the sweetened cream cheese in the center of each cookie.
  4. Cover the cream cheese with more dough and seal the edges.
  5. Bake for 10-12 minutes, until the edges are golden-brown and the centers remain soft.

Notes

Chilling the dough is crucial to prevent cookie pancakes. Avoid overfilling the cheesecake dollop.
