Pie Base
  • 1 pre-made pre-made chocolate cookie crust Store-bought is convenient; Trader Joe’s is great.
Filling Ingredients
  • 8 oz cream cheese Room temperature, use good quality.
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups heavy cream Cold for whipping.
  • 1/2 cup crushed peppermint candies Candy canes or peppermint bark.
  • 2 tsp peppermint extract Start small, it's strong!
  • optional dark chocolate shavings For garnish.

Preparation
  1. In a mixing bowl, combine cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Whip the heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  4. Add crushed peppermint candies and peppermint extract; fold in gently.
  5. Pour the filling into the pre-made chocolate cookie crust.
  6. Chill the pie in the refrigerator for at least 4 hours before serving.

Notes

Additional tips include keeping the cream cold, folding gently to maintain airiness, and avoiding excessive peppermint extract. Perfect for making ahead, just don’t freeze the assembled pie.
