  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth Store-bought or homemade.
  • 1/2 cup heavy cream Add later for a creamy texture.
  • 1/4 cup fresh cilantro, chopped Adjust based on preference.
  • Juice of 1 lime
  • to taste Salt and pepper Adjust according to preference.

Method

  1. In a large skillet, heat some oil over medium heat. Add the chopped onion and garlic, sautéing until softened.
  2. Add the chicken pieces, cooking until browned on all sides.
  3. Stir in the aji amarillo paste, then pour in the chicken broth and bring to a simmer.
  4. Reduce heat and add the heavy cream, stirring to combine.
  5. Let it simmer for about 15-20 minutes, until the chicken is cooked through and the sauce thickens slightly.
  6. Stir in chopped cilantro and lime juice, and season with salt and pepper to taste.
  7. Serve over rice or quinoa with sliced avocado and a crisp salad on the side.
