Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix together the wet ingredients: mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract.
- In another bowl, whisk together the dry ingredients: flour, oats, baking powder, baking soda, cinnamon, and salt.
Combining and Swirling
- Gently fold the dry ingredients into the wet mixture until just combined.
- For the swirl, mix together the melted vegan butter, light brown sugar, and cinnamon to form a paste.
- Spread half of the batter into the prepared loaf pan, dollop the swirl mixture over it, and top with the remaining batter.
- Use a knife to swirl the batter for that cinnamon roll effect.
Baking
- Bake in the preheated oven for about 60 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool completely before applying the glaze, which is made by mixing powdered sugar, melted vegan butter, and softened vegan cream cheese.
Notes
Store leftovers wrapped loosely in foil at room temperature for 2 days or refrigerate for up to 5 days. This bread can also be sliced and frozen for later use.
