A stick, sweet, and slightly bitter jam made with just three ingredients: coffee, sugar, and chia seeds. Perfect for pancakes, toast, or even spoonfuls straight from the jar.

  • 1 cup strong brewed coffee or cold brew concentrate Use quality coffee for better flavor.
  • 1 cup granulated sugar Cheap sugar is acceptable.
  • 2 tablespoons chia seeds Acts as a gelling agent; no pectin needed.

Method
 

Cooking
  1. In a saucepan, heat the coffee and sugar together over medium heat, stirring until the sugar fully dissolves.
  2. Once the mixture is hot and bubbling, add the chia seeds and stir well.
  3. Continue to cook, stirring frequently, until the mixture thickens, approximately 10-15 minutes.
  4. Remove from heat and let cool completely. The jam will thicken further as it cools.

Notes

Store in the fridge for up to two weeks, or freeze for up to three months. For flavor variations, consider incorporating a vanilla bean or a pinch of cinnamon.
