  • 1 cup Full Fat Cottage Cheese Full-fat gives plushness.
  • 2 large Eggs
Optional seasonings
  • 1/2 tsp Garlic Powder Optional
  • 1/2 tsp Italian Seasoning Optional
  • Black Pepper To taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a quarter sheet pan (9×13) with parchment paper and lightly spray with oil.
  2. Add cottage cheese, eggs, and seasonings to a blender. Blend on high until completely smooth and creamy. Ensure no lumps remain.
  3. Pour the batter onto the prepared baking sheet. Spread it out evenly to the edges using a spatula.
Baking
  1. Bake for 30-40 minutes. The flatbread is done when it is golden brown all over and dry to the touch in the center.
  2. Let it cool completely in the pan (about 10-15 minutes) to set so you can peel it off the parchment easily.
  3. Add your favorite sandwich fillings, roll it up tightly, and enjoy!

Notes

Wrap leftovers in parchment and tuck in the fridge for 3 days. Reheat gently in a skillet or oven. Gluten-free and can be made ahead for parties.
