  • 1 cup cottage cheese Regular cottage cheese recommended.
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder Essential for fluffiness.
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 1 large egg
  • as needed water water Add gradually to achieve desired dough consistency.

Method
 

Preparation
  1. In a mixing bowl, combine the cottage cheese, all-purpose flour, baking powder, and salt.
  2. Stir in the olive oil and egg until well combined.
  3. Gradually add water, a little at a time, until a soft dough forms.
Cooking
  1. Knead the dough lightly on a floured surface and divide it into smaller balls.
  2. Roll out each ball into flat circles.
  3. Heat a skillet over medium heat and cook each flatbread for 2-3 minutes on each side until golden brown.

Notes

Serve warm, ideal for soaking up sauces or enjoying plain. Can be stored in the fridge for up to 3 days.
