Ingredients
  

Crust Ingredients
  • 1 cup cottage cheese Can use low-fat or full-fat
  • 2 large eggs Large eggs are preferred for binding
  • 1 cup shredded mozzarella Extra cheese can be sprinkled on top
  • 1 teaspoon garlic powder Optional for added flavor
  • 1 teaspoon Italian seasoning Optional for added flavor

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a blender, combine cottage cheese, eggs, mozzarella, garlic powder, and Italian seasoning. Blend until smooth.
  3. Spread the mixture evenly onto the prepared baking sheet, shaping it into a crust about 1/4-inch thick.
Baking
  1. Bake the crust for 12 to 15 minutes or until set and lightly golden.
  2. Remove from the oven and add your desired toppings.
  3. Return to the oven for an additional 5 to 10 minutes until the cheese is melted and bubbly.
  4. Slice and serve immediately.

Notes

This crust is gluten-free and can be customized with various toppings. Store any leftovers in plastic wrap in the fridge. If making ahead, keep toppings separate until ready to bake.
