  • 1 cup cottage cheese Choose a standard brand like Trader Joe's or Aldi.
  • 1/4 cup nutritional yeast Provides umami flavor.
  • 1/2 cup diced tomatoes Make sure they're drained.
  • 1/4 cup bell pepper Diced; can substitute with jalapeƱo for heat.
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • to taste salt
  • to taste pepper
  • Optional: chopped cilantro for garnish

Method
 

Preparation
  1. In a blender, combine the cottage cheese, nutritional yeast, garlic powder, onion powder, salt, and pepper. Blend until smooth.
  2. Fold in the diced tomatoes and bell pepper.
  3. Serve cold or heat in a saucepan over low heat until warmed through.
  4. Garnish with chopped cilantro if desired.
  5. Allow to chill for 15 minutes before serving for the best flavor.

Notes

This dip pairs well with chips or vegetables. It can be made without a blender by mashing cottage cheese with a fork. Stays good in the fridge for up to 4 days.
