- In a bowl, mix cottage cheese, egg, almond flour, salt, and pepper until smooth.
- Heat a non-stick skillet over medium heat.
- Pour a ladle of the mixture into the skillet, spreading it thin.
Cooking
- Cook for about 2-3 minutes or until the edges lift.
- Flip and cook for another 2 minutes.
- Remove from heat, fill with desired fillings, and roll up.
- Serve immediately.
Notes
If you overfill them, they may leak. Aim for a golden exterior and a tender, slightly tangy interior.
