  • 1 pound Smoked Poultry Sausage Substitute with chicken kielbasa or turkey sausage if desired.
  • 1 pound Boneless Skinless Chicken Breasts/Thighs Can substitute with shredded rotisserie chicken.
  • 2 tablespoons Cajun Seasoning Store-bought or homemade.
  • 1 tablespoon Butter For sautéing vegetables.
Vegetables
  • 1 medium Onion Yellow or sweet onion recommended.
  • 2 stalks Celery
  • 1 medium Bell Pepper Any color.
  • 1 medium Jalapeño Adjust for spice level.
  • 3 cloves Garlic Minced.
Liquids and beans
  • 1 teaspoon Ground Cumin For earthy flavor.
  • 4 cups Chicken Broth Low-sodium recommended.
  • 2 cups White Beans Can substitute with kidney beans.
  • 1 cup Salsa Verde For tanginess.
Finishing touches
  • 1 cup Sour Cream/Crema/Heavy Cream/Cream Cheese For desired creaminess.
  • 1/2 cup Grated Parmesan
  • 2 tablespoons Lime Juice Optional but recommended.

Method
 

Cooking Process
  1. Brown sausage in a pot, removing some fat if needed.
  2. Sauté onions, celery, bell pepper, jalapeño, and garlic in butter/oil until translucent.
  3. Add Cajun seasoning and cumin to the vegetables.
  4. Add the chicken, white beans, and chicken broth, then simmer gently for 20–30 minutes.
  5. Stir in cream, sour cream, and parmesan off-heat for silkiness.
  6. Finish with lime juice, cilantro, and green onions. Taste and adjust salt as needed.

Notes

This chili can be frozen. Make sure to freeze it without dairy and stir in cream when reheating to maintain texture. It's also adaptable for slow cooker or Instant Pot preparation.
