- Brown sausage in a pot, removing some fat if needed.
- Sauté onions, celery, bell pepper, jalapeño, and garlic in butter/oil until translucent.
- Add Cajun seasoning and cumin to the vegetables.
- Add the chicken, white beans, and chicken broth, then simmer gently for 20–30 minutes.
- Stir in cream, sour cream, and parmesan off-heat for silkiness.
- Finish with lime juice, cilantro, and green onions. Taste and adjust salt as needed.
Notes
This chili can be frozen. Make sure to freeze it without dairy and stir in cream when reheating to maintain texture. It's also adaptable for slow cooker or Instant Pot preparation.
