Main Ingredients
  • 20 oz cheese tortellini (Fresh or refrigerated) Yields the best texture and taste.
  • 1 lb steak (sirloin or ribeye) Sirloin is leaner; ribeye is more tender.
  • 2 tbsp olive oil Essential for searing the steak.
  • 4 tbsp butter Creates a creamy sauce base.
  • 5 cloves garlic, minced Adds aromatic richness.
  • 1 cup heavy cream Contributes a velvety smoothness.
  • 3/4 cup whole milk Balances the richness.
  • 1 1/4 cups parmesan, shredded or freshly grated Brings a savory flavor.
  • Salt Don’t be shy.
  • Black pepper Freshly cracked if you’re feeling grown-up.
  • Garlic powder
  • Smoked paprika
  • Parsley, chopped (optional) Brightens the dish.
  • Red pepper flakes (optional) For a spicy kick.
  • Cracked black pepper (optional garnish) Elevates the flavor.

Method

Preparation
  1. Season steak generously with salt, pepper, garlic powder, and smoked paprika.
  2. Sear the steak in olive oil over high heat until caramelized (3–4 minutes per side for medium-rare, depending on thickness). Rest and slice.
  3. Cook tortellini according to the package instructions; drain but reserve some pasta water.
  4. Lower heat, melt butter, add minced garlic, and let it bloom (do not burn).
  5. Pour in the heavy cream and milk, simmer gently until slightly thickened.
  6. Stir in parmesan until silky. Add a splash of reserved pasta water if it needs to be loosened.
  7. Toss tortellini in the sauce, fold in sliced steak, and garnish with parsley and red pepper flakes.
  8. Serve immediately while dramatic steam rises.

Notes

For best results, use fresh tortellini. Optional mushrooms can be sautéed for added flavor. This dish is about bringing comfort and cheer, perfect for special occasions or cozy dinners.
