  • 4 pieces boneless, skinless chicken breasts
  • 2 cups fresh spinach, roughly chopped
  • 0.5 cups dried cranberries, finely chopped
  • 4 ounces Brie cheese, sliced
  • 2 tablespoons olive oil
  • Salt, black pepper, and paprika To taste
  • Chopped nuts (walnuts or pecans) or herbs like thyme Optional but recommended

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Butterfly each chicken breast horizontally to create a pocket.
  3. Season both sides of the chicken breasts with salt, black pepper, and paprika.
  4. In a bowl, mix together the spinach, cranberries, and Brie cheese. Optionally, add chopped nuts or herbs.
  5. Stuff each chicken breast with the filling, securing it with toothpicks if necessary.
  6. Heat olive oil in a skillet over medium-high heat and sear each stuffed chicken breast for 3–4 minutes per side until golden brown.
  7. Transfer the chicken to a baking dish and bake for 25–30 minutes or until the internal temperature reaches 165°F (74°C).
  8. Let the chicken rest for 5 minutes before slicing and serving warm.

Notes

Try to use chicken breasts of similar size for even cooking. Resting the chicken after baking helps retain its juices.
