Preparation
- Preheat the oven to 375°F (190°C).
- Butterfly each chicken breast horizontally to create a pocket.
- Season both sides of the chicken breasts with salt, black pepper, and paprika.
- In a bowl, mix together the spinach, cranberries, and Brie cheese. Optionally, add chopped nuts or herbs.
- Stuff each chicken breast with the filling, securing it with toothpicks if necessary.
- Heat olive oil in a skillet over medium-high heat and sear each stuffed chicken breast for 3–4 minutes per side until golden brown.
- Transfer the chicken to a baking dish and bake for 25–30 minutes or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 5 minutes before slicing and serving warm.
Notes
Try to use chicken breasts of similar size for even cooking. Resting the chicken after baking helps retain its juices.
