  • 4 cups Beef Broth (or vegetable broth for vegetarian option)
Vegetables
  • 1 large Onion (yellow or white for best flavor)
  • 3 cloves Garlic (minced)
  • 14.5 oz Diced Tomatoes (canned with juice)
  • 1 cup Corn (canned or frozen)
  • 15 oz Black Beans (drained and rinsed if canned)
  • 2 medium Potatoes (Yukon Gold or russet, diced small)
Spices
  • 1 tbsp Smoked Paprika
  • 1 tbsp Chili Powder (adjust for heat preference)
  • 1 tsp Cumin
  • 1 tsp Salt (adjust to taste)
  • 0.5 tsp Black Pepper (adjust to taste)
Cream and Cheese
  • 1 cup Heavy Cream (or coconut milk for dairy-free)
  • 1 cup Shredded Cheddar Cheese (fresh cheese preferred)

Method
 

Preparation
  1. Brown meat with a little salt.
  2. Add onion and garlic, soften — not burn.
  3. Stir in spices; smell the fireworks.
  4. Add tomatoes, broth, and potatoes; simmer.
  5. Toss beans and corn near the end; heat through.
  6. Finish with cream, cheese, and a smug grin.

Notes

For a vegetarian option, substitute beef with a meat alternative or double the beans. Add cream and cheese at the end for the best texture. Taste for salt at the end.
