Preparation
  1. Pat cutlets dry, dust with salt, pepper, and Tuscan Heat.
  2. Sear in olive oil until golden (listen for the sizzle).
  3. Lower heat, add butter, stir in chicken stock concentrate, sour cream, or Greek yogurt, lemon juice, and let reduce until thick but pourable.
Crispy Zucchini
  1. Slice zucchini, toss in olive oil, coat in panko, and broil or pan-fry till crackly.

Notes

Don’t overcrowd the pan to avoid steaming the chicken. Add lemon juice off heat to prevent curdling the dairy.
