Preparation
- In a large skillet over medium heat, cook the chicken breasts until no longer pink, about 7-10 minutes per side.
- Remove the chicken and set aside.
Making the Sauce
- In the same skillet, reduce heat and stir in cream cheese until melted.
- Add the diced tomatoes with chilies, taco seasoning, salt, and pepper. Mix well.
Combining and Serving
- Return the chicken to the skillet and coat with the creamy mixture.
- Top with shredded cheese and cover until melted.
- Garnish with chopped cilantro and serve warm.
Notes
For added flavor, scrape any browned bits from the pan into the sauce. This dish is even better if allowed to rest before serving.
