  • 2 tbsp olive oil
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese Buy good-quality Parmesan.
  • to taste none Salt and pepper
  • to taste none Fresh basil for garnish

Method
 

Cooking
  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a skillet, heat olive oil over medium heat.
  3. Add sliced mushrooms and sauté until golden brown.
  4. Stir in minced garlic and cook for an additional minute.
  5. Add spinach and cook until wilted.
  6. Pour in heavy cream and bring to a simmer.
  7. Stir in Parmesan cheese until melted and combined.
  8. Add the cooked pasta to the skillet and toss to coat.
  9. Season with salt and pepper to taste.
  10. Garnish with fresh basil before serving.

Notes

For added protein, consider including chicken or chickpeas. Reheat gently if making ahead, adding a splash of cream or pasta water.
