  • 2 tbsp butter Fancy butter recommended
  • 2 lbs chicken, cut into thin strips
  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 1 white onion , diced
  • 2 tbsp garlic, diced
  • ½ cup chicken stock
  • ½ cup roasted red pepper, drained and sliced
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, shredded
  • 1 tbsp Italian seasoning
  • ½ cup pepperoncini peppers, drained (sliced, rings, or whole)

Method
 

Preparation
  1. Cut the chicken into thin strips and season with salt and pepper.
  2. In a large skillet, melt the butter over medium-high heat.
  3. Add the chicken strips and cook until golden brown.
  4. Remove the chicken from the skillet and set aside.
  5. Add diced onions and garlic to the same skillet, sautéing until golden.
  6. Pour in the chicken stock and roasted red peppers, and reduce by half.
  7. Turn off the heat and whisk in the heavy cream and Parmesan cheese until smooth.
  8. Return to medium heat, stir in Italian seasoning and pepperoncini.
  9. Add the chicken back into the skillet and let it simmer until thickened.
  10. Serve hot over pasta, rice, vegetables, or as desired.

Notes

For best results, use quality ingredients. This dish can be served over rice or pasta for a complete meal.
