- Cut the chicken into thin strips and season with salt and pepper.
- In a large skillet, melt the butter over medium-high heat.
- Add the chicken strips and cook until golden brown.
- Remove the chicken from the skillet and set aside.
- Add diced onions and garlic to the same skillet, sautéing until golden.
- Pour in the chicken stock and roasted red peppers, and reduce by half.
- Turn off the heat and whisk in the heavy cream and Parmesan cheese until smooth.
- Return to medium heat, stir in Italian seasoning and pepperoncini.
- Add the chicken back into the skillet and let it simmer until thickened.
- Serve hot over pasta, rice, vegetables, or as desired.
