  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil for cooking
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream can also use half-and-half
  • 1 cup chicken broth
  • 2 cups cooked white rice fluffy white rice is preferred
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Cooking
  1. In a large skillet, heat olive oil over medium heat.
  2. Season chicken breasts with salt and pepper, then sear them until golden brown on both sides. Remove and set aside.
  3. In the same skillet, add chopped onion and minced garlic, sautéing until softened.
  4. Stir in the heavy cream and chicken broth, bringing to a simmer.
  5. Return the chicken to the skillet, cover, and cook for about 15 minutes or until the chicken is cooked through.
  6. Serve the creamy chicken mixture over cooked white rice and garnish with fresh parsley.

Notes

For extra flavor, you can add a whisper of mustard or a shower of parmesan — optional.
