  • 1 tablespoon olive oil Use a basic one for cooking, save fancy oils for salads
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Method
 

Cooking Steps
  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the mixed vegetables and stir for a few minutes.
  3. Pour in the vegetable broth and bring to a boil.
  4. Reduce heat and simmer for about 15 minutes, or until vegetables are tender.
  5. Stir in the heavy cream or coconut milk, and season with salt and pepper.
  6. Simmer for an additional 5 minutes.
  7. Serve warm, garnished with fresh herbs if desired.

Notes

For a silky finish, an immersion blender can be used. If you don't have one, mash with a potato masher for a rustic texture. Reserve some diced veggies to mix in after blending for varied texture. Freezing is an option but may change texture.
