Cooking Steps
- In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the mixed vegetables and stir for a few minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer for about 15 minutes, or until vegetables are tender.
- Stir in the heavy cream or coconut milk, and season with salt and pepper.
- Simmer for an additional 5 minutes.
- Serve warm, garnished with fresh herbs if desired.
Notes
For a silky finish, an immersion blender can be used. If you don't have one, mash with a potato masher for a rustic texture. Reserve some diced veggies to mix in after blending for varied texture. Freezing is an option but may change texture.
