  • 1 piece cucumber Fresh and firm
  • 2 cups strawberries Ripe and sweet, hulled and sliced
Dressing Ingredients
  • 1 tablespoon olive oil Extra virgin recommended
  • 1 tablespoon balsamic vinegar Adds tanginess
  • 1 teaspoon honey To sweeten the dressing
  • 1/4 teaspoon salt Adjust to taste
  • 1/4 teaspoon black pepper Freshly ground
Garnish
  • 2 tablespoons fresh mint Chopped, for freshness

Method
 

Preparation
  1. Wash the cucumber under cold water and slice it into thin rounds.
  2. Rinse, dry, and hull the strawberries before slicing them into bite-sized pieces.
Mixing the Salad
  1. In a small bowl, mix together olive oil, balsamic vinegar, honey, salt, and black pepper.
  2. In a large bowl, combine the cucumber and strawberries.
  3. Pour the dressing over the salad and gently toss to combine.
  4. Add the chopped mint and carefully fold into the salad.
